DAY TWO: POPEYE BREAD
For the second day of '5 Healthy and Fast Breakfast Recipes', I chose Jamie Oliver's Toasted Popeye Bread recipe, which I absolutely love. I mean what other breakfast recipe do you know to include spinach, avocado and eggs and still be super delicious? This recipe is perfect after a night out when you need a boost of vitamins!
4 Slices of wholemeal bread
3 Free-Range Eggs
1 slice of higher-welfare Smoked Ham
80 g of Spinach
1 tbsp of Unsweetened Almond Milk
1 tbsp of Soft Cheese
Extra-Virgin Olive Oil
A pinch of Chia Seeds
First, toast the bread on both sides over medium heat. Meanwhile, slice the ham and add it into a blender with one egg, the spinach and the milk. Pulse until it turns into a smooth paste. Now preheat the grill on high while dividing the green mixture between the 4 bread slices. Pop the tray under the grill and cook for around 3-4 minutes, until the edges turn brown-ish. Meanwhile, fry the two remaining eggs in a non-stick frying pan. Now divide the Popeye Bread and serve each with one egg. Drizzle some extra-virgin olive oil on top and a few chia seeds to serve.
