Salads have always been a go to for summer meals. They are refreshing, easy to make and fast! Who want to spend time in the kitchen on a hot summer day? If you crave something sweet but still healthy this wild rocket salad with green apples and pecan nuts will soon become your favourite too!
First, place the pecan nuts on a tray and roast them in the 180 degree preheated oven for 8-10 minutes. Then, the pecan nuts need to cool down for 5 minutes.
Meanwhile, thinly slice the red onion and the green apples. Now add these ingredients to a serving bowl.
For the salad dressing, place the olive oil, maple syrup/honey and the lemon juice in a small jar and shake it until all the ingredients are well mixed together. Pour the mixture over the salad and sprinkle the cranberries and pecan nuts on the salad.
