Happy Friday friends! Because I receive such a good response from you whenever I share quick and healthy recipes on Instagram Stories, I decided to create a short and sweet post about this versatile and amazing superfood: chia seeds. I hope you'll enjoy these simple but delicious recipes and please let me know which one is your favourite!
2 tablespoons of chia seeds provide:

• 5x more Calcium than milk
• 100% more Omega-3 than salmon
• 2x more Iron than spinach
• 7x more vitamin C than oranges
• 3x more Antioxidants than blueberries
1. Mango & Coconut Chia Pudding
Add 3 tablespoons of chia seeds to 1 cup of coconut milk and leave aside (for at least 10 minutes). Meanwhile, peel and pit 1 ripe mango and cut into pieces. In a food processor puree the mango until smooth. Serve with desiccated coconut on top!
2. Kiwi & Pecan Chia Pudding
Same as before, leave the chia seeds and the milk aside until you prepare the kiwi and pecan nuts. First, cut the pecan nuts in small pieces and roast them in the oven for 3 minutes. Peel and cut 2 kiwis in cubes and place 1 of them at the bottom of the glass. Add the other kiwi to a food processor and blitz until puree. Top up the glass with the chia pudding and the pureed kiwi. Drizzle the pecan nuts on top and add some maple syrup for extra sweetness!
Optional: I also did three mini spirulina pancakes as these go amazingly with maple syrup! For one large pancake, I used 1 egg, a dash of coconut milk, 1 tablespoon of flour and 2 teaspoons of spirulina powder. I've cut the large pancake into 4 small ones and I've served them with maple syrup. YUM!
3. Pomegranate & Coconut Chia Pudding
Ok, in my opinion, this is the prettiest and probably the easiest one to make! Add the pomengranate seeds in your bowl or small jar, top up with chia seeds soaked in coconut milk and sprinkle a few more pomengranate seeds on top. Drizzle some desiccated coconut and enjoy!
4. Banana & Cocoa Chia Pudding
If you love chocolate this one is for you! For this recipe before adding the chia seeds to the coconut milk, add 1 tablespoon of cocoa and mix. Then, place half of the pudding at the bottom of the glass, add a few slices of banana and then pour the remaining pudding. Sprinkle some cocoa, sunflower and pumpkin seeds on top (you can also add the rest of banana slices if you have any left).
